Peach Pecan Oatmeal Bake

This quick and easy recipe is great for breakfast or a quick snack.  Drizzle with maple syrup or oatmilk for a tasty treat!  You can also experiment and easily switch up the nuts and fruits with your favorites!

You will need:

  • 3/4 cp of chopped pecans (of your favorite nuts)
  • 2 cps old fashion oats
  • 2 tsps ground cinnamon
  • 1 tsp pink Himalayan salt (table salt works too)
  • 2 cps of oatmilk
  • 4 or 5 peaches – peeled and diced with seeds removed
  • 1 large egg
  • 1/3 cp organic maple syrup
  • 2 tsps vanilla extract

Preheat oven to 375 degrees

In a large bowl, mix oats, baking powder, cinnamon, salt and pecans and pour into a medium baking dish.

Layer peaches over the dry ingredients.

In a small bowl, whisk together the egg, maple syrup, vanilla extract, and oat milk.

Once mixed, pour over top of the dry mixture and peaches.

Bake for 30-35 mins or until golden brown. 

Serve warm, drizzled with maple syrup and/or oat milk. If serving as a snack – it goes great with ice cream too!
