Cilantro Lime and Black Bean Rice

You will need:

  • 2 cups of vegetable broth
  • 1 cup of brown rice (or your favorite rice – with a 15 min cook time)
  • 1/4 tsp of Himalayan salt
  • 2 – 3 cloves of garlic
  • the juice from 1 freshly squeezed lime ( or 2, if you are like me and love limes!)
  • 15 oz can of black beans – drained and rinsed
  • 1/2 cup of freshly chopped cilantro

Cook rice in vegetable broth according to directions.

Once done, remove from heat and add all of the remaining ingredients. Stir a few times and you are ready to enjoy!

It is that easy!
